Hydrogenated Oil - A Major Contributor of Arterial Plaque
Hydrogenated oil is an artificially-processed oil. It is a major contibutor of arterial plaque lodged in the walls of your arteries. What is this type of oil? It is basically oil in which the essential fatty acids were converted into another form chemically. Manufacturers have long been doing this since the 1930s to make oils more stable and to prolong the shelf life of foods. In the 1990s, scientists realized that hydrogenation of oil affects the health of people like you and me.

When this type of oil is manufactured, unsaturated fats, which are considered healthy for consumers, are converted into fatty acids known as trans fats. Trans fatty acids mean bad news for you because they increase the levels of your bad cholesterol and decrease the number of your good cholesterol. On top of that, they gradually pile up and constitute a big percentage of arterial plaque in your arteries.
You might be fond of eating pastries, cookies, bread and other delicious goodies from your neighborhood bakeshop. What is the difference between full hydrogenation and partial hydrogenation? In hydrogenation, oil is heated and hydrogen is forced into it. The fatty acids in the oil take in hydrogen and make them viscous and dense. Full hydrogenation means you make a solid out of the oil just like how margarine is made, for example. On the other hand, you call it partial hydrogenation if you stop mid-way through the process. You then have a semi-solid substance with a consistency just like that of butter. And you know what, manufacturers absolutely love them because they give their products extra rich flavor and extended shelf life. They save lots of money, too, because they are much cheaper than real butter. Do these words mean anything to you? - Interesterified oil - it is a combination of oil that is fully hydrogenated and polyunsaturated oil. It has a similar process with the former
- Diglycerides - they are used as emulsifiers
- Monoglycerides - they improve the loaf volume in bread
They are fancy names for poison found in your food, just like hydrogenated oil is. They are just as deadly and they are bad for your health in the long run.
What you can do - Make it a habit to read the label of each food that you buy. Avoid any food with the words, "hydrogenated" and "partially hydrogenated" in the label
